All I did last month was ate soup and watched anime because I caught the flu. I recovered, but in less than two weeks I caught a cold (unbelievable). After being sick for almost all of January, I’m happy to say that I’m finally better! So, in this post I’m sharing a very easy vegetable soup recipe that is healthy and delicious. What I like about this recipe is that you can customize it with whatever vegetables or soup broth you like. I like to stick with the basics – carrots, celery, onions, and tomatoes. It was my first time attempting a soup like this and it came out great!
The amount of vegetables you use is up to you. I like to add a lot.
2 cups of chopped celery
2 cups of chopped carrots
1 medium-sized onions, chopped
1 medium-sized potato cut into about 1-inch thick pieces
2-3 gloves of garlic (depends on the size of the garlic)
2 medium size canned tomatoes diced with garlic, oregano, & basil
1 medium can of diced tomato
1 box of vegetable broth (32 oz)
1 tsp of salt and pepper
Optional: 2 small cooked sweet corns cut into 1-inch
Step 1: Wash, peel (carrots and potato), and chop all the vegetables. Chopping onions is a pain because I cry a river. A trick I use when chopping onions is to remove the skin, cut it in half, and stick it in the freezer for 5-10 minutes before cutting it up. This has really prevented me from crying.
Step 2: On medium heat, saute the onions for about 1-2 minutes, and then add the garlic. I like to add the garlic a little later to prevent the garlic from burning too quickly. Add in salt and pepper. And lastly, add in your carrots, celery, and potato and saute it for 1-2 minute.
Step 3: Add in your vegetable broth, and canned diced tomato. I’m using this canned diced tomato with garlic, oregano, and basil, but you can use fresh herbs instead.
Step 4: Bring your soup up to a boil before turning it down to low heat. Let it simmer for 20-30 minutes. Remember to remove any scum that comes up. After 20-30 minutes, your soup is ready!
This vegetable soup will warm you up on a cold day. Even if you don’t like eating a lot of vegetables, it’s very flavorful and hearty. I hope you give this recipe a try!
This simmered vegetable soup can be very light, if you would like a heavier meal, you can add in some cooked pasta.
